PAN ROASTED LAMB RACK

Broccolini, mashed potatoes, onion jam, jus.

Bread served without any butter/oil/anything.

As I requested, the lamb was cooked medium. I specified “no blood”, and this seemed to meet that requirement exactly. It was nice and pink, but stayed just outside ghoul/wolf territory. The only problem with these perfectly-cooked cutlets was that they had no discernable seasoning. They were just meat. I added some salt to them, and they were enjoyable, if unexciting. The mashed potato was smooth, and the broccolini was lightly cooked. The jus didn’t really taste like much.

Forest berry compote, honeycomb.

This amazing-looking dessert had an outer layer of frothy torched meringue. Beneath that was a kind of crumbly pie-crust layer that was a bit out of place amongst the other smooth components. At the core of the dessert was honeycomb ice cream. The whole thing was sitting in a compote of berries that was both sweet and bursting with tangy flavour. The berries were the star of the show, even if all these disparate elements didn’t really go together.
